No Fry Sunshine Doughnuts
- 1 c. scalded milk
- 1/4 c. potato water (warm)
- 1 yeast cake
- 1/2 c. sugar
- 3/4 c. shortening
- 1 tsp. salt or less
- 1 c. mashed potatoes
- 2 beaten eggs
- 4 1/2 c. flour
- 4 1/2 Tbsp. cornstarch
- 1/2 tsp. ground allspice
- Combine milk, shortening and salt.
- Cool.
- Dissolve yeast in warm potato water.
- Add mashed potatoes and dissolved yeast to milk mixture.
- Blend eggs, allspice and cornstarch, then add flour, blending constantly.
- Cover with moist dishtowel and let rise.
- Place dough on floured board and knead.
- Roll out dough to 1/2-inch thickness and cut with doughnut cutter.
- Place on buttered large cookie sheet and let rise.
- Bake at 425u0b0 until browned.
- May brush with butter and sprinkle with sugar.
