Dark Applesauce Fruit Cake
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 2 Tbsp. vanilla
- 1 tsp. cloves
- 1/2 tsp. salt
- 2 tsp. soda
- 3 eggs
- 1 box raisins
- 1 c. shortening
- 2 1/2 c. sugar
- 1 c. nuts
- 2 c. applesauce
- 4 1/2 c. flour
- 1 small container candied fruit
- 20 oz. can crushed pineapple
- 1 small bottle maraschino cherries
- Cream shortening and sugar.
- Add eggs, one at a time, and beat after each addition.
- Add raisins and nuts to a small portion of the flour.
- Sift remaining flour together with soda, salt and spices.
- Add dry ingredients with vanilla, candied fruit, applesauce and crushed pineapple.
- Beat well.
- Fold in raisins and nuts; beat well.
- Pour into greased and floured tube pan.
- Top with cherries.
- Bake for 2 hours at 325u0b0.
