Italian Macaroni And Cheese
- 1/2 lb. ground beef
- 1 (16 oz.) can tomatoes
- 1/3 c. tomato paste
- 1 Tbsp. minced onion
- 1 tsp. sugar
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- dash of pepper
- 1 2/3 c. macaroni
- 1 c. cottage cheese
- 1 c. Cheddar cheese, shredded
- 2 Tbsp. grated Parmesan
- Cook meat in frying pan until it loses red color; drain.
- Add tomatoes, tomato paste, onion and seasonings.
- Simmer slowly for 30 minutes; stir as needed.
- Preheat oven to 325u0b0.
- Cook macaroni in boiling water following package directions.
- Drain.
- Combine macaroni and cottage cheese.
- Pour a little meat mixture in bottom of 2 1/2-quart casserole dish.
- Top with half of macaroni mixture; half the Cheddar cheese and half the meat mixture.
- Repeat layers. Sprinkle Parmesan on top and bake for 40 minutes or until well heated.
- Remove from oven and serve.
- Yields 6 servings.
