Pasta With Salmon And Fresh Veggies
- 1 lb. boned salmon, with skin OR 1 (16 oz.)can salmon
- 2 Tbsp. butter
- 1/2 tsp chopped fresh thyme OR 1/4 tsp. dried thyme
- 1 tsp. finely chopped fresh dill OR 1/4 tsp. dill weed
- 1/2 tsp. black pepper
- 1 1/8 tsp. salt
- 1/2 lb. green beans, trimmed
- 1 small yellow onion, halved and thinly sliced
- 2 cloves garlic, finely chopped
- 1 sweet red pepper, sliced into thin strips
- 2 Tbsp. olive oil
- 2 medium ripe tomatoes, cored and coarsely chopped
- 1 lb. linguine, cooked and drained
- 1/4 cup hot milk
- 1/4 cup plus 2 Tbsp. grated Parmesan cheese
- Pinch paprika
- Heat broiler.
- Dot salmon with 1 Tbsp. butter.tprinkle with thyme, 1/2 tsp. dill, 1/4 tsp. black pepper and 1/8 tsp. salt. Broil 5 to 6 inches from heat 8 to 10 minutes, until salmon almost flakes to touch of fork.
- Remove from broiler; keep warm.
