Caesar Salad
- 1/4 cup (1 ounce) preshredded fresh Parmesan cheese
- 1/4 cup low-fat buttermilk
- 2 teaspoons lemon juice
- 1 1/2 teaspoons anchovy paste
- 1/4 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 1 garlic clove
- 1/3 cup plain fat-free yogurt
- 2 (10-ounce) bags romaine salad or 12 cups sliced romaine lettuce
- 1 cup fat-free garlic-and-onion croutons
- 2 tablespoons (1/2 ounce) preshredded fresh Parmesan cheese
- Combine first 7 ingredients in a blender; process until smooth. Pour into a bowl; stir in yogurt. Combine lettuce and croutons in a large bowl. Drizzle yogurt mixture over salad; toss gently to coat. Spoon salad into six individual bowls; sprinkle each with 1 teaspoon cheese.
