Dutch Green Split Pea Soup
- 2 oz. Canadian-style bacon
- 2 c. water, divided
- 1 1/2 oz. uncooked green split peas, sorted and rinsed
- 6 oz. potatoes, pared and diced
- 1/2 c. leeks, chopped
- 1/2 c. celery root, pared and diced
- 2 Tbsp. celery leaves
- 4 oz. precooked kielbasa, sliced into 1/4-inch thick rounds
- 1/8 tsp. summer savory leaves
- dash of pepper
- Cut bacon into small pieces and set aside.
- In a 2-quart saucepan, bring 1 cup of water to a boil.
- Add peas and boil for 3 minutes.
- Remove from heat.
- Cover and let stand for 1 hour.
- Add remaining cup of water and the bacon to saucepan and bring to a boil.
- Reduce heat, partially cover and let simmer for 1 hour. Add potatoes, leeks, celery root and celery leaves and cook until vegetables are tender, about 30 minutes.
- Add kielbasa, savory, and pepper and cook until sausage is heated through.
- Serves 2.
