Fresh Tomato Sauce
- 5 gloves garlic
- 1/2 c. olive oil
- 4 lb. pear or plum tomatoes
- 1/2 c. fresh basil or dried
- salt and pepper
- pasta (any kind)
- Parmesan cheese
- Plunge tomatoes in boiling water for 30 seconds.
- Remove them with a slotted spoon and run under cold water.
- Remove skins and press out the seeds.
- Peel the garlic and slice into big pieces. In a frying pan brown garlic lightly.
- Remove some or all of the garlic depending on how much garlic you like.
- (Save the garlic not used in sauce to mash and add to salad dressing.)
- Add tomatoes to oil; bring to a boil and simmer 15 to 20 minutes, stirring occasionally.
- Mash tomatoes and any garlic still in the pan.
- Stir in basil.
- The sauce goes well with any kind of pasta.
- Sprinkle with cheese and other herbs (rosemary, thyme, marjoram) if you like.
- (May be substituted for the basil.
- Use only 1 to 2 tablespoons.)
