Applesauce Fruit Cake
- 1 c. raisins
- 3/4 c. nuts (more, if desired)
- 1 c. mixed candied fruits
- 1/4 c. dates (more, if desired)
- 2 1/2 c. sifted all-purpose flour
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 2 tsp. soda
- 1 1/2 c. applesauce, sweetened and drained
- 2 eggs
- 1 c. sugar
- 1/2 c. shortening
- 1 tsp. vanilla
- 2 tsp. lemon juice
- 1 tsp. grated lemon rind
- 2 tsp. cold coffee
- Grease pan (angel food cake pan) well.
- Heat oven to 300u0b0. Prepare fruit.
- Sift a portion of flour over fruit, mixing it in lightly.
- Sift remaining flour with soda and spices.
- Cream shortening well.
- Add sugar gradually, creaming well.
- When light and fluffy, stir in well beaten eggs.
- Add applesauce which has been drained quite dry.
- Add dry ingredients gradually, stirring in well.
- Add fruits and seasonings.
- Mix thoroughly.
- Turn into prepared pan and bake in slow oven about 1 1/2 hours.
- Cool. Store in cool, dry place with a piece of apple.
