Pineapple-Upside Down Cake

  1. Cream margarine and sugar.
  2. Add well beaten egg yolks.
  3. Sift flour, salt and baking powder together.
  4. Add to first mixture, a little at a time alternating with milk.
  5. Fold in stiffly beaten egg whites and vanilla.
  6. Melt the 1/2 stick margarine in large pan.
  7. Spread the brown sugar over the margarine.
  8. Drain juice from pineapple and arrange slices close together over brown sugar. Pour cake batter over fruit and bake in moderate oven at 350u0b0 for about 45 minutes.
  9. Let rest in pan about 5 minutes, then turn out on cake plate.
  10. Serve with whipped cream.
