Pineapple-Upside Down Cake
- 1 c. sugar
- 1/2 c. margarine
- 2 eggs
- 1 tsp. vanilla
- 1 c. firmly packed brown sugar
- 1 (No. 2) can sliced pineapple
- 1/2 stick margarine
- 2 c. plain flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- Cream margarine and sugar.
- Add well beaten egg yolks.
- Sift flour, salt and baking powder together.
- Add to first mixture, a little at a time alternating with milk.
- Fold in stiffly beaten egg whites and vanilla.
- Melt the 1/2 stick margarine in large pan.
- Spread the brown sugar over the margarine.
- Drain juice from pineapple and arrange slices close together over brown sugar. Pour cake batter over fruit and bake in moderate oven at 350u0b0 for about 45 minutes.
- Let rest in pan about 5 minutes, then turn out on cake plate.
- Serve with whipped cream.
