Tangy Grouper Sandwiches
- 2 tablespoons lemon juice
- 1 teaspoon low-sodium Worcestershire sauce
- 1 teaspoon olive oil
- 1/2 teaspoon pepper
- 1/8 teaspoon paprika
- 3 tablespoons fat-free mayonnaise
- 1 tablespoon minced onion
- 2 teaspoons dill pickle relish
- 1/2 teaspoon prepared mustard
- 1 (1-pound) grouper fillet, cut into 4 pieces
- Cooking spray
- 4 green leaf lettuce leaves
- 12 (1/4-inch-thick) slices plum tomato
- 4 hamburger buns, split and toasted
- Prepare grill.
- Combine first 5 ingredients; set aside. Combine mayonnaise and next 3 ingredients; set aside.
- Place fish on a grill rack coated with cooking spray; grill, covered, 5 minutes on each side or until fish flakes easily when tested with a fork, basting with lemon juice mixture.
- Layer 1 lettuce leaf, 3 slices tomato, and 1 piece fish on bottom half of each bun. Spoon mayonnaise mixture evenly onto fish, and cover with top halves of buns. Serve immediately.
