Microwave Swiss Steak
- 1 lb. boneless beef round steak, cut 3/4-inch thick
- 2 Tbsp. butter or margarine
- 1/2 c. sliced carrots
- 1/2 c. chopped green pepper
- 1/4 c. chopped onion
- 1 (8 oz.) can tomato sauce
- 4 tsp. cornstarch
- 1 (7 1/2 oz.) can tomatoes, cut up
- 1 tsp. instant beef bouillon
- 1 tsp. Worcestershire sauce
- 1/2 tsp. dried basil, crushed
- optional: cooked noodles or mashed potatoes
- Trim excess fat from round steak.
- Cut into 6 serving-size pieces.
- Pound meat with a meat mallet to 1/4-inch thickness; set aside.
- In a 12 x 7 1/2 x 2-inch baking dish, combine butter, carrots, green pepper and onion.
- Cover and place in microwave oven.
- Cook vegetable mixture at High for 4 minutes until carrots are crisp-tender.
- Meanwhile, in a mixing bowl, blend cornstarch into the tomato sauce until smooth.
- Stir in undrained tomatoes, bouillon, Worcestershire sauce and basil.
- Stir into cooked vegetable mixture.
- Add meat, turning to coat.
- Cover and place in microwave.
- Cook meat at Medium for 20 minutes.
- Rearrange meat; stir sauce.
- Cook at Medium for 20 minutes more until meat is tender.
- Serve with hot cooked noodles or mashed potatoes, if desired.
- Makes 6 servings.
