Cashew Chicken With Broccoli

  1. Lightly brown nuts in oil in large nonstick skillet over medium heat, about 3 minutes.
  2. Remove with slotted spoon.
  3. Saute onion and garlic in skillet 2 minutes.
  4. Add chicken.
  5. Saute until golden brown, about 8 minutes.
  6. Add broccoli, 3/4 cup broth and soy.
  7. Simmer, covered, 5 minutes.
  8. Dissolve cornstarch in remaining 1/4 cup broth.
  9. Stir into skillet.
  10. Simmer, stirring over medium heat until thickened.
  11. Boil 1 minute.
  12. Return cashews to skillet with salt and pepper.
