Caesar Salad
- 1/4 cup water
- 3 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic pepper seasoning (such as Lawry's)
- 2 garlic cloves, crushed
- 10 cup torn romaine lettuce
- 1 cup fat-free Caesar croutons
- 2 tablespoons shredded fresh Parmesan cheese
- Freshly ground black pepper
- Combine first 7 ingredients in a small bowl; stir well with a whisk.
- Combine lettuce and dressing in a large bowl; toss well. Add croutons and cheese; toss well. Sprinkle with pepper.
- Note: Olive oil is high in monounsaturated fat, the type of fat that lowers "bad" cholesterol and raises "good" cholesterol. Avocados, peanuts, and canola oil are also good sources of monounsaturated fat.
