Bacon-Wrapped Corn-On-The-Cob
- 1 tablespoon light brown sugar
- 2 teaspoons ancho chile powder
- 2 teaspoons ground cumin
- 1/2 teaspoon kosher salt
- 4 ears fresh corn, shucked and cut in half crosswise
- Cooking spray
- 8 bacon slices
- 1 medium lime, cut into wedges
- Fresh cilantro
- Preheat a grill or grill pan to medium (350u0b0F to 400u0b0F). Stir together brown sugar, chile powder, cumin, and salt in a small bowl. Spray corn pieces with cooking spray; rub all over with brown sugar mixture. Wrap 1 bacon slice around each corn piece, securing with toothpicks where necessary.
- Place prepared corn on oiled grates; grill, uncovered, turning occasionally, until bacon is crisp, about 5 minutes total. Transfer to a plate; spritz with lime wedges, and garnish with cilantro. Serve immediately.
