Cauliflower Margherita Pizza
- 2 1/2 cups cauliflower florets
- 1 large egg
- 1/2 tsp. fresh oregano, chopped
- 1 tsp. grated Parmesan
- Nonstick cooking spray
- 1-2 tbsp. tomato paste
- 1/4 cup grated mozzarella
- 1 tbsp. corn
- Quarter of a red pepper, cut into thin strips
- A handful of arugula
- Heat the oven to 400u0b0F. Process the cauliflower in a processor, and transfer to a microwave-safe bowl. Cook on High for 5-6 mins, until softened. Squeeze out excess water in a clean towel, and then mix with the egg, oregano, and Parmesan, and season.
- Spread the cauliflower mix on a baking sheet lined with parchment paper, to a circle that is roughly 9-inches wide. Spray with the nonstick cooking spray, and cook for 10 mins.
- Mix the tomato paste with a little hot water, and spread on the cauliflower base. Top with the mozzarella, corn, and red pepper, and cook for another 10 mins. Top with the arugula and serve.
