Pineapple Casserole
- Cooking spray
- 1 (20-oz.) can pineapple chunks in juice, drained
- 1 (20-oz.) can pineapple tidbits in juice, drained
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 6 tablespoons (about 1 1/2 oz.) all-purpose flour
- 2 tablespoons fresh lime juice (from 1 lime)
- 8 ounces sharp Cheddar cheese, grated (about 2 cups)
- 40 round buttery crackers (such as Ritz) (from 2 cracker sleeves), crushed (about 2 cups)
- 1/2 cup (4 oz.) salted butter, melted
- Preheat oven to 350u0b0F. Lightly coat an 8-inch square baking dish with cooking spray. Stir together pineapple chunks, pineapple tidbits, granulated sugar, brown sugar, flour, and lime juice in a large bowl; fold in cheese. Spoon mixture into prepared baking dish.
- Stir together crushed crackers and melted butter in a medium bowl; sprinkle over pineapple mixture in baking dish. Bake in preheated oven until top is golden brown and mixture is bubbling, 30 to 35 minutes, covering with aluminum foil after 25 minutes to prevent overbrowning. Let stand 10 minutes; serve.
