Spicy-Hot Black-Eyed Peas
- Cooking spray
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 (15.8-ounce) can black-eyed peas, undrained
- 1 (14 1/2-ounce) can no-salt-added stewed tomatoes, undrained
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon dry mustard
- 1 teaspoon liquid smoke
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/8 teaspoon ground red pepper
- 1 tablespoon minced fresh parsley
- Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add onion and bell pepper; cook, stirring constantly, until crisp-tender. Add peas and next 7 ingredients; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes. Sprinkle with parsley.
