Chicken Or Turkey Tacos
- 1/4 c. defatted chicken or turkey stock or vegetable stock
- 1 c. finely chopped onions
- 3/4 c. finely chopped green or red bell pepper
- 1/4 c. chopped fresh cilantro (Mexican or Chinese parsley)
- 1 (4 oz.) can diced green chiles
- 1 Tbsp. finely chopped seeded jalapeno chile
- 2 c. diced, cooked chicken or turkey
- 1 1/2 c. cooked brown rice
- 2 tsp. soy sauce
- 1 1/2 tsp. basil
- 1 tsp. garlic powder
- dash of cayenne pepper
- 12 corn tortillas
- raw vegetable garnishes (shredded lettuce, diced tomatoes and chopped green onions)
- In a skillet bring the stock to a boil and add the onions and bell pepper.
- Saute the vegetables over medium heat until softened (about 5 to 7 minutes).
- Add the cilantro, chiles, chicken or turkey, rice and seasonings.
- Stir well, cover and cook over low heat for 4 to 5 minutes or until thoroughly heated.
- Heat the tortillas in the oven until hot but still pliable.
- Spoon about 1/3 cup of the filling into each warmed tortilla.
- Add raw vegetable garnishes.
- Fold tortilla in half and eat sandwich style.
- A dollop of nonfat yogurt, a few drops of bottled hot sauce or picante sauce and a little chopped fresh cilantro may be used as additional garnishes for extra flavor.
- Yields 12 tacos (about 4 to 6 servings).
