Chicken Or Turkey Tacos

  1. In a skillet bring the stock to a boil and add the onions and bell pepper.
  2. Saute the vegetables over medium heat until softened (about 5 to 7 minutes).
  3. Add the cilantro, chiles, chicken or turkey, rice and seasonings.
  4. Stir well, cover and cook over low heat for 4 to 5 minutes or until thoroughly heated.
  5. Heat the tortillas in the oven until hot but still pliable.
  6. Spoon about 1/3 cup of the filling into each warmed tortilla.
  7. Add raw vegetable garnishes.
  8. Fold tortilla in half and eat sandwich style.
  9. A dollop of nonfat yogurt, a few drops of bottled hot sauce or picante sauce and a little chopped fresh cilantro may be used as additional garnishes for extra flavor.
  10. Yields 12 tacos (about 4 to 6 servings).
