Orange Glazed Cranberry Pumpkin Bread
- 3 1/2 c. all-purpose flour
- 1 2/3 c. sugar
- 2 tsp. baking soda
- 2 tsp. pumpkin pie spice
- 3/4 tsp. salt
- 1 tsp. baking powder
- 1 (16 oz.) can cranberry sauce (whole berry)
- 1 (16 oz.) can solid pack pumpkin
- 3/4 c. chopped pecans
- 2/3 c. Wesson vegetable oil
- 4 eggs
- In a large bowl, mix together flour, sugar, baking soda, pumpkin pie spice, salt and baking powder.
- In second bowl, stir together remaining ingredients until well mixed. Add pumpkin mixture to flour mixture and stir until all ingredients are well moistened.
- Pour batter into two 9 1/4 x 5 1/2 x 2-inch greased loaf pans.
- Bake at 350u0b0 for 65 minutes or until bread tests done with wooden picks.
- Cool in pans 10 minutes, then remove to cooling racks.
- Completely cool bread, then drizzle glaze over top and sides.
- Makes 2 loaves.
