Lemon Blueberry Oatmeal Muffins
- 2 Tbsp. quick oats, uncooked
- 2 Tbsp. granulated sugar
- 1 1/2 c. all purpose flour,
- 1 1/4 c. quick or old fashioned oats, uncooked
- 2/3 c. granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 1 c. plain nonfat yogurt
- 1 egg white plus 1 egg, lightly beaten
- 3 Tbsp. lemon juice
- 2 Tbsp. vegetable oil
- 1 tsp. grated lemon peel
- 1 tsp. vanilla
- 1 c. fresh or frozen blueberries (do not thaw)
- Heat oven to 400u0b0.
- Line 12 medium muffin cups with paper baking cups or spray bottoms only with cooking spray.
- For topping, combine the 2 tablespoons of oats and 2 tablespoons of sugar in a small bowl;
- mix well.
- Set aside.
