Chicken Breast And Mushroom In Madeira Sauce

  1. Heat 2 tablespoons butter in large skillet, add chicken and brown over medium-high heat for about 10 minutes on each side. Sprinkle both sides with salt and pepper.
  2. Transfer to a 12 x 8 x 2-inch baking dish.
  3. Trim mushrooms, toss with lemon juice and set aside.
  4. Add 1 tablespoon butter to skillet, stir in shallots and saute for 3 minutes.
  5. Add mushrooms and cook for 5 minutes or until slightly brown, stirring often.
  6. Blend in flour, pour in wine, then add cream.
  7. Cook, stirring constantly, until thickened and bubbly.
  8. Mix in 1/2 cup of cheese.
  9. Spoon sauce over chicken, sprinkle with remaining cheese.
  10. Bake at 400u0b0 for 20 minutes or until chicken is bubbly and tender.
  11. Serves 6.
