Chicken Breast And Mushroom In Madeira Sauce
- 2 Tbsp. butter
- 3 whole chicken breasts, split and boned
- 1 tsp. salt
- 3/4 lb. medium size mushrooms
- 2 tsp. lemon juice
- 1 Tbsp. butter
- 2 Tbsp. shallots
- 1 Tbsp. flour
- 3/4 c. Madeira wine
- 3/4 c. heavy cream
- 3/4 c. shredded Swiss cheese
- 1/4 tsp. pepper
- Heat 2 tablespoons butter in large skillet, add chicken and brown over medium-high heat for about 10 minutes on each side. Sprinkle both sides with salt and pepper.
- Transfer to a 12 x 8 x 2-inch baking dish.
- Trim mushrooms, toss with lemon juice and set aside.
- Add 1 tablespoon butter to skillet, stir in shallots and saute for 3 minutes.
- Add mushrooms and cook for 5 minutes or until slightly brown, stirring often.
- Blend in flour, pour in wine, then add cream.
- Cook, stirring constantly, until thickened and bubbly.
- Mix in 1/2 cup of cheese.
- Spoon sauce over chicken, sprinkle with remaining cheese.
- Bake at 400u0b0 for 20 minutes or until chicken is bubbly and tender.
- Serves 6.
