Ham And Turkey Loaf
- 2 c. ham, chopped
- 1 (12 oz.) pkg. ground turkey
- 2 eggs or egg whites
- 4 slices bread
- 1/2 c. milk
- 1 can pineapple rings (in own juice)
- 2 level Tbsp. brown sugar
- 1 Tbsp. pineapple juice
- 1 Tbsp. very finely chopped onion
- Chop ham (I use processor); mix with turkey.
- Add onion and eggs; mix well.
- Break bread into pieces; pour milk over it.
- Stir to break up bread, then add to meat.
- Combine well.
- Spray loaf pan.
- Sprinkle brown sugar in bottom; sprinkle pineapple juice over sugar.
- Place 3 pineapple rings over sugar.
- Carefully spoon meat mixture over pineapple.
- Place loaf pan in larger pan with 1 inch water in larger pan.
- Bake at 350u0b0 for 45 minutes.
- Place 3 more pineapple rings on top; bake 15 minutes longer.
- Add more water, if needed.
- To serve, loosen edges and invert loaf onto platter. Serve leftovers cold later.
