Miriam'S Favorite Microwaved Shrimp And Rice
- 3 Tbsp. unsalted butter
- 3 Tbsp. olive oil
- 1/2 c. chopped scallion or onion
- 2 celery stalks, chopped
- 2 c. rice (uncooked)
- 4 c. broth (chicken or clam)
- 3/4 lb. asparagus or string beans
- 1 lb. shrimp, peeled
- 3/4 c. fresh or frozen peas
- 1/2 c. Parmesan cheese
- 1/2 c. fresh parsley, chopped
- Heat butter and oil in a 13 x 9-inch glass dish, uncovered, at full heat in microwave for 3 minutes.
- Add scallions, celery, parsley and rice.
- Stir.
- Cook at full power 4 minutes.
- Stir in broth.
- Cook at full power for 12 minutes.
- Add remaining vegetables and cook 12 more minutes.
- Let sit for 10 minutes with loose cover.
- Sprinkle with cheese and eat.
