Miriam'S Favorite Microwaved Shrimp And Rice

  1. Heat butter and oil in a 13 x 9-inch glass dish, uncovered, at full heat in microwave for 3 minutes.
  2. Add scallions, celery, parsley and rice.
  3. Stir.
  4. Cook at full power 4 minutes.
  5. Stir in broth.
  6. Cook at full power for 12 minutes.
  7. Add remaining vegetables and cook 12 more minutes.
  8. Let sit for 10 minutes with loose cover.
  9. Sprinkle with cheese and eat.
