Spinach Parmesan Cheese Souffle
- 4 egg yolks
- 3 Tbsp. margarine
- 3 Tbsp. flour
- 1 c. hot milk
- 1/8 tsp. ground nutmeg
- 1/4 tsp. garlic powder
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. Parmesan cheese, grated
- 1 c. chopped spinach, cooked and drained
- 4 egg whites
- Preheat oven to 375u0b0.
- Beat egg yolks until thick and lemon colored; set aside.
- Heat butter; add flour.
- Gradually add milk, stirring until smooth and thickened.
- Add nutmeg, garlic powder, salt and pepper and remove from heat.
- Add 1/3 of hot mixture to egg yolks, stirring constantly, then stir back into remaining hot mixture.
- Add cheese and spinach and mix.
- Beat egg whites stiff and fold into spinach mixture.
- Pour into 1 1/2-quart casserole. Bake, uncovered, in a 375u0b0 oven for 30 minutes.
