Minty Peach Sorbet
- 4 cups chopped peeled peaches (about 2 pounds)
- 1 cup water
- 1/2 cup sugar
- 2 tablespoons fresh lime juice
- 2 (4-inch) mint sprigs, crushed
- Combine all ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer 7 minutes. Discard mint sprigs.
- Place mixture in a blender or food processor; process until smooth. Pour into a bowl; cover and chill.
- Pour chilled mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions.
- Gently pressing or crushing the mint sprigs with a spoon releases the mint's fragrant oils and amps up the flavor in this sorbet. When buying fresh mint, look for bright green, crisp leaves with no signs of wilting. Fresh mint can also be frozen for later use. Simply rinse the leaves, pat dry, and freeze in a zip-top plastic freezer bag. The leaves will darken once they're frozen, but that won't affect the flavor. When you need to use some, just pull out what you need, and return the rest to the freezer.
