Cheese Enchiladas
- 1 lb. ground beef
- 1 can cream of chicken soup
- 1 soup can of milk
- 12 slices (1/2 lb.) processed American cheese
- 1 small jar pimentos, chopped and drained
- 20 tortillas
- 1/2 c. Cheddar cheese
- 1 c. chopped onion
- 1 small can green chilies, chopped and drained
- Brown beef and onion.
- Combine cream of chicken soup, milk and American cheese in saucepan.
- Cover over low heat until cheese melts, stir constantly.
- Add pimentos and green chilies; set aside.
- Soften tortillas in microwave.
- Add Cheddar cheese to cooled beef.
- Fill tortillas with beef mixture.
- Roll to enclose filling.
- Place in a dish.
- Pour cheese mixture over enchiladas. Bake covered for 30 minutes at 350u0b0.
