Grilled Grouper With Cucumber Salsa
- 2 cups diced seeded peeled cucumber (about 2 medium)
- 1/3 cup thinly sliced green onions
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon grated lime rind
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons finely chopped seeded jalapeno pepper
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 1 garlic clove, minced
- 4 (6-ounce) grouper fillets (about 1 1/2 inches thick)
- 2 teaspoons olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Cooking spray
- Combine first 9 ingredients in a bowl; stir well. Cover and chill at least 2 hours.
- Prepare grill.
- Brush fillets evenly with 2 teaspoons oil; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Place fillets on grill rack coated with cooking spray; grill 7 minutes on each side or until fish flakes easily when tested with a fork. Serve fish with cucumber salsa.
