Fruited Pork Salad

  1. In jar with tight-fitting lid, shake together first six ingredients.
  2. Set aside.
  3. Spray large nonstick skillet with vegetable cooking spray and heat to medium heat.
  4. Stir-fry pork slices 3 to 4 minutes until done.
  5. Arrange lettuce on individual plates.
  6. Top with fruit and pork.
  7. Spoon dressing
  8. over salads. Serves 4.
