Jelly Roll

  1. Beat egg whites until stiff, but not dry.
  2. Gradually fold in 1/2 cup sugar.
  3. Mix egg yolks and water and beat until foamy.
  4. Add 1/4 cup sugar, beating until thick and lemon colored.
  5. Add lemon extract.
  6. Sift flour, baking powder and salt together.
  7. Fold egg yolk mixture into egg white mixture.
  8. Fold in flour mixture.
  9. Bake in oven at 350u0b0 until done.
  10. Turn out on towel dusted with confectioners sugar.
  11. Trim off hard edges and spread jelly on cake.
  12. Roll up lengthwise.
  13. Wrap in towel or wax paper until ready to slice.
