Crispy Crunch Cookies
- 2 large ripe bananas
- 1/2 c. granulated sugar
- 1 egg
- 1 c. white flour
- 1 tsp. salt
- 2 1/2 c. granola
- 1 c. brown sugar (packed)
- 1/2 c. butter, softened
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1 c. seedless raisins
- Mash bananas to make 1 cup.
- Cream sugars and butter until light and fluffy.
- Beat in mashed bananas, egg and vanilla until blended.
- Combine flour, baking powder, salt and cinnamon.
- Beat into banana mixture.
- Beat in granola and raisins.
- Drop by teaspoonful three inches apart onto greased cookie sheets.
- Bake in a 350u0b0 oven for 15 to 30 minutes.
- Remove to wire racks to complete cooling.
- Makes 3 1/2 to 4 dozen cookies.
