Apricot-Nut Bread
- 2 1/2 cups all-purpose flour
- 1 cup chopped dried apricots
- 2/3 cup sugar
- 1/2 cup chopped walnuts
- 1 tablespoon baking powder
- 1 teaspoon salt
- 4 teaspoons grated orange rind
- 1 cup orange juice
- 1/2 cup 1% low-fat milk
- 3 tablespoons unsweetened applesauce
- 2 egg whites, lightly beaten
- Vegetable cooking spray
- Combine first 7 ingredients in a large bowl. Combine juice and the next 3 ingredients in a bowl; stir well. Add to dry ingredients, stirring just until moistened.
- Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350u0b0 for 1 hour or until a wooden pick inserted in center comes out clean. Remove from pan; let cool on a wire rack.
