Banana Chiffon Pie
- 2/3 c. powdered skim milk
- 1 tsp. coconut extract
- 1 medium banana, cut in rounds
- pan of ice water
- 1 to 2 pkg. Equal
- 2 tsp. unflavored gelatin
- 2/3 c. water
- Make a large pan of ice water.
- Set empty mixing bowl in water. Place 1/3 cup tap water in a small pan.
- Pour 2 teaspoons of unflavored gelatin over to soften.
- In mixing bowl, measure 2/3 cup powdered milk.
- Add equal, extract and 1/3 cup ice water.
- Stir. Plug in electric hand mixer.
- Bring gelatin and water to a boil. While mixing at high speed, add gelatin mix to milk.
- Mix and continue to whip until like whipped cream.
- In pie tin, layer cream; add banana and top with rest of cream.
- This is a once a week fruit and all the milk for one day.
- Eat any time.
