Honey-Glazed Pork Tenderloin With Homemade Applesauce
- 5 apples (such as Gala or Fuji), peeled and chopped
- 3 tablespoons butter, melted
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 tablespoon sugar
- 1 1/4 teaspoons kosher salt, divided
- 2 (12-oz.) pork tenderloins, trimmed
- 3 tablespoons olive oil
- 1 1/4 teaspoons ground cumin
- 1 teaspoon black pepper
- 1/2 teaspoon apple pie spice
- 2 tablespoons honey
- 1 tablespoon butter, melted
- Preheat oven to 425u0b0. Saute apples in 3 Tbsp. melted butter in a large saucepan over medium-high heat 5 minutes. Stir in zest, juice, sugar, 1/4 tsp. salt, and 1 cup water; bring to a boil. Reduce heat to medium, and simmer, stirring occasionally, 40 minutes or until apples are tender. Meanwhile, brush pork with oil. Stir together cumin, next 2 ingredients, and remaining salt; rub over pork. Place pork in a roasting pan. Bake at 425u0b0 for 12 minutes. Whisk together honey and 1 Tbsp. melted butter; brush half of mixture over pork, and bake 1 minute. Turn pork, and brush with remaining honey mixture. Bake 2 more minutes or until a meat thermometer inserted in thickest portion registers 145u0b0. Let stand 5 minutes. Mash apple mixture to desired consistency, and serve with pork.
