Pasta With Shrimp And Wine
- 12 oz. shrimp (can be combined with scallops)
- 1 c. onion
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 c. dry white wine
- 1 Tbsp. chicken bouillon granules
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 2 medium tomatoes, peeled, seeded and chopped
- 10 oz. linguine
- 1/4 c. butter, melted
- 1/2 c. grated Parmesan cheese
- 1/2 c. snipped fresh parsley
- 1/4 tsp. red pepper (optional)
- zucchini slices (optional)
- In a saucepan, cook onion in 2 tablespoons butter and olive oil until tender, but not brown.
- Stir in wine, bouillon granules, basil, salt, pepper and red pepper (optional).
- Bring to a boil gently, uncovered, for 12 to 15 minutes, until liquid is reduced by half.
