Enchilada Suisa
- 2 lb. tomatillos
- 3 Serrano chiles
- 1 Tbsp. chopped onion
- 1 clove garlic
- 1 Tbsp. chopped cilantro
- oil
- dash of soda
- dash of sugar
- salt and pepper
- White Sauce
- 1 c. whipping cream
- grated Jack or Cheddar cheese
- 12 corn tortillas
- hot sauce
- 2 c. cooked chicken, shredded
- 7 Tbsp. butter
- 2 Tbsp. chopped onion
- 1 clove garlic
- 1/2 c. flour
- 2 c. milk
- 1 tsp. Worcestershire sauce
- salt and pepper
- Remove papery husks from tomatillos.
- Wash tomatillos and chiles well.
- Cook, covered, in a little boiling water until tender, about 15 minutes.
- Remove stems and seeds from chiles. Place chiles and drained tomatillos in blender container.
- Add onion, garlic and cilantro and blend until pureed.
