Cowboy Stew
- 6 slices bacon
- 1 c. sliced onion (1 large)
- 1/2 c. chopped green pepper
- 1 clove garlic, crushed
- 1 1/2 lb. ground chuck or round
- 1 (1 lb. 13 oz.) tomatoes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. chili powder
- 1 (12 oz.) can whole kernel corn, drained
- 1 can (about 1 lb.) red kidney beans, drained
- 2 c. cubed, pared potatoes
- Cook bacon until crisp; drain on paper towels.
- Crumble; reserve.
- Saute onion, green pepper and garlic in bacon drippings until tender.
- Add ground beef; cook until well browned, breaking up with fork as it cooks.
- Add tomatoes, salt, pepper and chili powder.
- Cover; simmer 30 minutes.
- Add vegetables; simmer 15 minutes.
- Sprinkle with bacon.
- Makes 8 servings.
