Cowboy Stew

  1. Cook bacon until crisp; drain on paper towels.
  2. Crumble; reserve.
  3. Saute onion, green pepper and garlic in bacon drippings until tender.
  4. Add ground beef; cook until well browned, breaking up with fork as it cooks.
  5. Add tomatoes, salt, pepper and chili powder.
  6. Cover; simmer 30 minutes.
  7. Add vegetables; simmer 15 minutes.
  8. Sprinkle with bacon.
  9. Makes 8 servings.
