Ivory Coast Chicken
- 3 lb. frying chicken
- 1 Tbsp. oil
- 1 medium onion, diced
- 2 to 3 green onions, sliced
- 1 large tomato, diced
- 1 bay leaf
- 1 Tbsp. tomato paste
- 3 1/2 c. weak chicken broth
- 1/2 c. peanut butter
- 1 tsp. salt
- 1 tsp. cayenne pepper
- Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.
- Add both kinds of onions, tomatoes and tomato paste; cook 1 minute.
- Stir in chicken broth and bring to a boil.
- Cover and boil 8 minutes.
- Turn heat to low.
- Mix peanut butter with warm water to make a paste and add this to the chicken.
- Add salt, cayenne pepper and bay leaf.
- Simmer 30 minutes.
- This is very spicy; adjust to taste.
- Makes 4 to 6 servings.
