Ivory Coast Chicken

  1. Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.
  2. Add both kinds of onions, tomatoes and tomato paste; cook 1 minute.
  3. Stir in chicken broth and bring to a boil.
  4. Cover and boil 8 minutes.
  5. Turn heat to low.
  6. Mix peanut butter with warm water to make a paste and add this to the chicken.
  7. Add salt, cayenne pepper and bay leaf.
  8. Simmer 30 minutes.
  9. This is very spicy; adjust to taste.
  10. Makes 4 to 6 servings.
