Turkey And Grain Salad
- 6 cups water
- 3/4 cup wild rice, uncooked
- 1/2 cup pearl barley, uncooked
- 1/2 pound smoked turkey breast, diced
- 2 cups diced Red Delicious apple
- 3/4 cup sliced green onions
- 3/4 cup diced celery
- 1/4 cup plus 1 tablespoon cider vinegar
- 1/4 cup frozen apple juice concentrate, thawed and undiluted
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon freshly ground pepper
- 12 red leaf lettuce leaves
- Combine water, wild rice, and barley in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes or until rice and barley are tender. Drain. Add turkey and next 3 ingredients; toss well.
- Combine vinegar and next 5 ingredients. Pour over rice mixture; toss well. Cover and chill 3 hours, stirring occasionally.
- To serve, place 2 lettuce leaves on each of 6 plates. Spoon rice mixture over lettuce.
