Sweet-N-Sour Pork
- 1 1/2 lb. lean pork shoulder, cut into 1/2-inch cubes
- 3 Tbsp. cooking oil
- 1 1/2 c. chicken bouillon
- 3 small tomatoes, cut into wedges
- 4 1/2 Tbsp. chopped onion
- 6 pineapple slices, cut into eighths
- 4 Tbsp. cornstarch
- 3/8 c. sugar
- 3/8 c. vinegar
- 3 tsp. soy sauce
- 3/4 c. pineapple syrup
- 6 c. boiled rice
- dash of salt and pepper
- Heat cooking oil in frypan.
- Thoroughly brown pork, sprinkle well with salt and pepper.
- Cover and cook on low heat for 20 minutes.
- Add onion and pineapple.
- Cook 10 minutes more.
- Add tomato wedges; blend cornstarch with sugar, vinegar, soy sauce and pineapple syrup.
- Add to mixture.
- Stir constantly until thick. Cook 5 minutes longer.
- Serve over a nest of boiled rice.
