Apple Slaw With Blue Cheese
- 2 large Red Delicious apples, cored and cut into 1/4-inch wedges
- 2 tablespoons lemon juice
- 6 cups thinly sliced red cabbage (about 1 1/4 pounds)
- 6 cups thinly sliced napa (Chinese) cabbage (about 1 1/4 pounds)
- 1 tablespoon sugar
- 2 tablespoons water
- 2 tablespoons cider vinegar
- 2 tablespoons red wine vinegar
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon celery seeds
- 1/2 teaspoon ground coriander
- 1/2 teaspoon pepper
- 1/2 cup (2 ounces) crumbled blue cheese
- Combine apple and juice in a large bowl; toss well. Add cabbages; toss gently.
- Combine sugar and next 8 ingredients (sugar through pepper) in a bowl; stir well. Pour over cabbage mixture; toss gently. Add cheese; toss gently.
