Chicken Fajitas

  1. Combine first 5 ingredients in a small bowl.
  2. Add chicken. Stir to coat.
  3. Cover and chill at least 30 minutes.
  4. Drain chicken, reserving marinade. Wrap tortillas in aluminum foil and bake at 350u0b0 for 15 minutes.
  5. Heat oil in a heavy skillet.
  6. Add chicken.
  7. Cook 2 to 3 minutes, stirring constantly.
  8. Add marinade, pepper strips and onion.
  9. Saute until vegetables are crisp-tender. Remove from heat.
  10. Divide mixture evenly and spoon a portion onto each tortilla.
  11. If desired, top with any of the following: chopped tomato, sour cream, shredded cheese and picante sauce; then wrap. Yield: 3 servings.
