Caramelized Plantains With Honey-Peanut Sauce

  1. Whisk together brown sugar and salt in a medium bowl. Add plantain slices, tossing to coat.
  2. Cook plantains in hot oil in a large nonstick skillet over medium heat 2 minutes on each side or until golden brown. Transfer to serving plates, using a slotted spoon.
  3. Combine honey and next 5 ingredients in a small saucepan. Cook over medium heat, whisking constantly, 2 minutes or until thoroughly heated and smooth. Remove from heat; stir in butter until smooth. Spoon sauce over plantains. Serve immediately. Garnish, if desired.
