Fresh Grapefruit Cake
- 2/3 c. butter or margarine
- 1 3/4 c. sugar
- 2 eggs
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 c. cake flour
- 1/2 c. fresh grapefruit juice
- 3/4 c. milk
- 1 tsp. grated grapefruit peel
- 1 1/2 tsp. vanilla extract
- In large bowl, cream butter.
- Gradually add sugar; beat well. Add eggs, one at a time, beating well after each addition.
- Sift together flour, baking powder and salt; add to creamed mixture, alternating with grapefruit juice (beginning and ending with flour mixture).
- Gradually add milk.
- Stir in peel and vanilla; mix well.
- Pour batter into 2 greased and floured 9-inch round pans. Bake at 350u0b0 for about 30 minutes, or until toothpick inserted comes out clean.
- Cool in pans for 10 minutes.
- Remove; let cool completely.
- Frost with Grapefruit Frosting.
