Low-Fat Taco Salad
- 1 lb. ground turkey
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 jalapeno pepper, diced
- 2 cloves garlic, chopped
- 1 c. taco sauce
- 1 tsp. cumin
- 2 Tbsp. chili powder
- 1/2 c. water
- lo-fat taco chips
- 2 c. kidney beans, drained
- 1 head lettuce, shredded
- 2 tomatoes, chopped
- 1 small onion, diced
- 1 bell pepper, diced
- 6 oz. no-fat Cheddar, shredded
- fat-free sour cream
- taco sauce
- Brown turkey with onion, peppers and garlic. Drain thoroughly. Add cumin and chili powder.
- Stir 3 to 4 minutes to blend flavors. Add water and 1 cup taco sauce.
- Simmer 10 to 12 minutes.
- Let each person assemble their own salad using the meat mixture and remaining ingredients, using the shredded Cheddar, sour cream, taco sauce and chips for toppings.
