Mixed Louie Salad
- 1 cup mayonnaise
- 1 tablespoon finely minced onion
- 1 teaspoon chopped fresh tarragon
- 1 teaspoon minced red bell pepper
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon sweet pickle relish
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon Worcestershire sauce
- 1/4 cup ketchup
- 1/4 cup chili sauce
- 1 pound lump crabmeat
- 3/4 pound peeled and deveined cooked medium shrimp
- 1 pound steamed mussels, shucked
- 2 tomatoes, seeded and diced
- 1/2 cup cilantro leaves
- 3 cups leaf lettuce
- Garnishes: steamed mussels in shells, halved hard-cooked eggs, steamed green beans, steamed asparagus, cilantro leaves
- Combine first 12 ingredients in a large bowl. Combine crab and next 4 ingredients; toss with dressing. Cover and chill until ready to serve. Top lettuce with seafood salad; garnish, if desired.
