Egg Burrito
- 4 large eggs
- 1/4 cup water
- 1/4 teaspoon salt
- Dash ground black pepper
- Nonstick cooking spray
- 3/4 cup shredded monterey-jack cheese
- 8 tablespoons mild salsa
- Prep time: 10 minutes
- Cooking time: About 10 minutes
- Heat oven to 400 degrees.
- Whisk eggs with water, salt, and pepper in a medium bowl; in a skillet coated with nonstick cooking spray, scramble eggs over medium heat until cooked through.
- Divide the eggs among tortillas, then spoon 2 tablespoons of the cheese and 1 tablespoon of the salsa over each.
- Roll tortillas and place seam side down in a baking dish. Bake for 5 minutes, or until heated through.
- How kids can help: Whisk eggs; spoon cheese and salsa onto tortillas; roll tortillas.
