Egg Burrito

  1. Prep time: 10 minutes
  2. Cooking time: About 10 minutes
  3. Heat oven to 400 degrees.
  4. Whisk eggs with water, salt, and pepper in a medium bowl; in a skillet coated with nonstick cooking spray, scramble eggs over medium heat until cooked through.
  5. Divide the eggs among tortillas, then spoon 2 tablespoons of the cheese and 1 tablespoon of the salsa over each.
  6. Roll tortillas and place seam side down in a baking dish. Bake for 5 minutes, or until heated through.
  7. How kids can help: Whisk eggs; spoon cheese and salsa onto tortillas; roll tortillas.
  8. TIP: Pepper-jack cheese revs up adult portions.
