Cheesy Vegie Soup
- 2 Tbsp. chopped onion
- 2 Tbsp. margarine or butter
- 2 c. frozen corn
- 1 c. chopped broccoli
- 1/2 c. shredded carrot
- 1/2 c. water
- 2 (10 3/4 oz.) cans condensed cream of potato soup
- 2 c. milk
- 3/4 c. shredded Cheddar cheese
- 3 oz. Provolone cheese, cut up
- 1 can tuna (optional)
- dash of pepper
- In a medium saucepan, cook onion in hot margarine or butter until tender, but not brown.
- Add corn, broccoli, carrot, (tuna) and water.
- Bring to boiling.
- Reduce heat, cover and simmer for 10 minutes or until vegetables are tender.
- Stir in soup, milk, cheeses and pepper.
- Cook and stir over medium heat until cheese is melted and soup is heated through.
- Serves 4 for dinner or makes 8 side dishes.
