Maui Pine Cream Pie
- 1 1/2 c. flour
- 2 tsp. sugar
- 1/2 tsp. salt
- 1/2 c. butter flavor Crisco
- 2 Tbsp. unsalted Macadamia nuts, finely chopped
- 2 tsp. grated lemon peel
- 3 Tbsp. cold milk
- 8 oz. cream cheese, soften
- 1/2 c. confectioners sugar
- 1/3 c. Macadamia nuts, chopped
- 1/3 c. drained crushed pineapple
- 1/2 tsp. vanilla
- 4 egg yolks
- 1 c. sugar
- 2 c. milk
- 3 heaping Tbsp. cornstarch
- 2 Tbsp. butter
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 c. crushed pineapple, drained
- Put milk, sugar, salt and drained pineapple in saucepan; let come to near boil.
- Mix cornstarch and egg yolks together with 1 tablespoon water and add slowly to milk mixture, stirring constantly until thick, on low fire.
- Add butter and vanilla and remove immediately from heat.
- Cool about 1/2 hour in refrigerator.
