Vegetable Fantasia
- 4 pkg. (10 oz. each) frozen chopped broccoli
- 1/4 lb. mushrooms, sliced
- 1/4 c. + 2 Tbsp. butter, divided
- 1/4 c. mayonnaise
- 1/2 c. sour cream
- 1/2 c. Parmesan cheese
- 1 (8 1/2 oz.) can artichokes, drained
- salt and pepper to taste
- 3 tomatoes
- 1/2 c. dry bread crumbs
- Cook broccoli according to package directions.
- Drain.
- Saute mushrooms in 2 tablespoons of butter.
- Combine mayonnaise, sour cream and Parmesan cheese.
- Stir in artichokes, broccoli and mushrooms.
- Season to taste with salt and pepper.
- Pour into 9 x 13-inch baking dish.
- Slice tomatoes 1/2-inch thick; place on broccoli.
- Saute bread crumbs in 1/2 cup butter until browned. Sprinkle over casserole.
- Bake at 350u0b0 for 20 minutes.
