Oneida Or Lime Pickles
- 7 lb. cucumbers
- 2 gal. water
- 2 c. lime
- 2 qt. vinegar
- 4 1/2 lb. sugar
- 1 Tbsp. salt
- 1 tsp. celery seed
- 1 tsp. whole cloves
- 1 tsp. mixed spices
- Slice cucumbers lengthwise, then scoop seeds out with spoon. Cut in 1/2-inch thick slices.
- Cover with 2 gallons water in which 2 cups lime has been dissolved.
- Cover; let stand 24 hours.
- Drain and rinse at least 3 times in cold water.
- Cover with ice water and let stand 3 hours.
- Drain well and dry with towel.
- Make a syrup of vinegar, sugar, salt and spices.
- Stir well and heat. Pour syrup over cukes and let stand overnight.
- The next morning, boil for about 35 minutes or until transparent.
- Put in sterilized jars and seal.
- Save leftover syrup.
- Cover and refrigerate until next making.
